Lai Yee's Kitchen - 薑汁撞奶 Ginger milk curd, also known as ginger-juice milk curd or ginger milk pudding, is a Chinese hot dessert originated in Guangzhou in the Guangdong Province. The main ingredients are ginger, milk, and sugar. I am 100% Cantonese and absolutely love this dessert. Es[ecially, in my Hong Kong trips, I always made sure I eat that every morning. You may also serve it cold for hot weather, but hot dessert has always been my favourite. Super easy to make but u need to watch the temperature! You must have a food thermometer on standby. It is like biochemical cooking. Suddenly I feel like a scientist for once.
Ingredients :
. 100g ginger, squeezed, for each bowl, put in 1 tbsp of ginger juice
. 330g milk. 12g Sugar or 1tbsp
Add on:
. 2 tbsp coffee (Optional, traditionally they dont add coffee 😛 )
You may also add 1/4 cup of milk powder if you like the curd to be thicker. It is super easy and fast to make for a nice breakfast or late night dessert craving. Remember the temperature must be at 80c degree, and it will also work around 70c degree. Try it!

In the years after the Cultural Revolution (late 1970s), Chinese ink painting became popular in Guangzhou art circles. Oil painters and industrial design artists all started doing Chinese ink paintings. Many of my fellow classmates and friends were already exceptional Chinese ink painters and my own forays into the field took place around that time. The subjects were invariably the Classic of Poetry, Liao Zhai (a collection of ghost stories), and the lifestyle of the Yao people in Yuebei (north of Guangdong province). I developed some expertise in the discipline after several years. In 1979, my artwork was featured in Hong Kong's Ming Pao Monthly in the same issue as Lin Yong, a master of figurative Chinese ink painting.
In my first few years in Hong Kong during the 1980s, I worked on oil paintings during the day and painted with ink at night. For every painting, I would create a small sketch or even initial draft before putting ink to paper. I painted 'Shuo Ren' from the Classic of Poetry, 'Luo Shen' as depicted by Cao Zhi, the demon fox of Liao Zhai, and Yao maidens. Why was I so obsessed with painting characters in ink? Why did I seek to make a career out of it? My reasoning at the time now eludes me. I had not yet abandoned Chinese painting when I first came to Taiwan, but by the end of the 1980s my attention was fully directed towards oil paintings and I had no time for ink paintings any longer.

So, if you don't have a car, how can you get around China? We'll start with the subway system and travel to somewhere interesting, take a look at how it all works and how much it all costs.
The Shenzhen Metro (simplified Chinese: 深圳地铁; traditional Chinese: 深圳地鐵; pinyin: Shēnzhèn Dìtiě; Jyutping: sam1 zan3 dei6 tit3) is the subway or underground system for the city of Shenzhen in Guangdong province, China. The system opened on 28 December 2004, making Shenzhen the sixth city in mainland China to have a subway after Beijing, Tianjin, Shanghai, Guangzhou and Wuhan. The Shenzhen Metro currently has eight lines, 166 stations, and 286 kilometres (178 miles)[4][1] of total trackage in operation. The network underwent rapid expansion prior to the 2011 Summer Universiade, opening 110 km (68 mi) of tracks in June 2011. The system underwent another major expansion with the opening of Line 11 in June 2016 and both Lines 7 and 9 in October 2016 shortly making the system the third longest in China before Guangzhou Metro regained the position in December 2016. Two new lines and extension of several existing lines are underway with a long term goal of and 1,124 kilometres (698 miles) of lines by 2030. In February 2017, the government announced that work on four new metro lines (Lines 12,13, 14 and 16) would start in 2017 at a cost of 160 billion Yuan.

Guangzhou (simplified Chinese: 广州; traditional Chinese: 廣州; Cantonese pronunciation: [kʷɔ̌ːŋ.tsɐ̂u̯] or [kʷɔ̌ːŋ.tsɐ́u̯] ( listen); Mandarin pronunciation: [kwàŋ.ʈʂóu] ( listen)), traditionally romanised as Canton, is the capital and most populous city of the province of Guangdong in southern China. Located on the Pearl River about 120 km (75 mi) north-northwest of Hong Kong and 145 km (90 mi) north of Macau, Guangzhou was a major terminus of the maritime Silk Road and continues to serve as a major port and transportation hub.
Guangzhou is currently, the third most-populous city in mainland China, behind Beijing and Shanghai; holds sub-provincial administrative status; and is one of China's five National Central Cities. In 2015 the city's administrative area was estimated to have a population of 13,501,100 and forms part of one of the most populous metropolitan agglomerations on Earth. Some estimates place the population of the built-up area of the Pearl River Delta Mega City as high as 44 million without the Hong Kong SAR and 54 million including it. Guangzhou is identified as a Beta+ Global city. In recent years, there has been a rapidly increasing number of foreign residents and illegal immigrants from the Middle East, Eastern Europe and Southeast Asia, as well as from Africa. This has led to it being dubbed the "Capital of the Third World". The migrant population from other provinces of China in Guangzhou was 40 percent of the city's total population in 2008. Most of them are rural migrants, and they speak only Mandarin.
Guangzhou was long the only Chinese port permitted for most foreign traders. The city proper fell to the British and was opened by the First Opium War. It lost trade to other ports such as Hong Kong and Shanghai, but continued to serve as a major entrepôt. In modern commerce, Guangzhou is best known for its annual Canton Fair, the oldest and largest trade fair in China. For the three consecutive years 2013–2015, Forbes ranked Guangzhou as the best commercial city on the Chinese mainland.
Let's take a proper look at Guangzhou, one of the four 1st tier cities in China...
